I found these amazing effin' eggplants at the farmer's market last week, and decided I needed to do something different, nutritious and satisfying with them. This motivation, coupled with my desire to add more quinoa into my life, brought about these super simple and delicious Quinoa-Stuffed Eggplants. Enjoy them as-is. I tried to think of what I should serve with them and couldn't think of anything. They need nothing else.
The other day I posted this Vegan Quinoa Pilaf, which made like 5 or 6 cups of the awesomeness. I had a bunch of leftovers, so I decided to turn those leftovers into something a little fun and different. That's when I came up with these little schmeckens of awesomeness.
These vegan quinoa fritters are a great way to transform that eff-load of quinoa into a snack with a different flavor profile. And the Sriracha aioli is really just a perfect match in this situation.
I love quinoa, but for some reason I rarely make it. I don't know why. I wish I was better about making it, but I think I always forget about it. Fortunately, more and more people have been eating it and asking for recipes on ways to prepare quinoa. One of these people is Paula, my husband's saving grace at work. She says she doesn't really cook much, but she's a total fitness nut (I've heard the stories of you eating one of my cookies, then heading to the gym on your lunch break, Paula), so this superfood is right up her alley.
