I was craving these the other day, but I haven't had any good lettuce wraps anywhere since I went vegan. I decided to create some of my own with flavors I remember from my pre-vegan days. I wanted a rich, sweet bbq-type sauce. I think I've created that in this application. If you're feeding more than two people, I suggest doubling the recipe. I also think this would be phenomenal over rice. If you do decide to serve it over rice, double the cooking sauce so it's a little saucier. Also, try mushrooms instead of tofu if you want.

You complete me. There really is no match for your wonderfulness. You've made it possible for me to feed even the most carnivorous of omnivores without a fuss, and you've enabled me to recreate childhood favorites like a charm. These Vegan Chicken Salad Sandwiches were delectable, delightful perfection.

Ever since we road tripped to Tennessee, I've been a little obsessed with Southern fare. I've been having a blast, drilling Sean about all the delicacies, asking him about things he misses, and trying to veganize his favorites. Recently he mentioned pimento cheese, and it sounded like a tasty way to satisfy my cheese craving. We plotted and schemed, and this is what we came up with.
Sean and I were sitting on the couch one night, discussing what makes good falafel and tossing around ideas on how to make it better. Sean came up with this little gem of an idea, and boy was it a terrific idea!
To me, this takes the two things I love most about Israeli food, falafel and hummus, and turns them into one, no nonsense treat. We ate these babies in these wonderful effin' homemade pitas, which are also spelled out below, but I can totally see eating them on their own. I want to try making them like little poppers, but alas, that's another post altogether. So, this post is 3 posts in one; hummus, falafel and pita. Y'all are so spoiled!
Bomb Diggity Barbecue Chick'n Braid was bomb diggity. This was something I figured would be a nice replacement for a vegan bbq chicken pizza, but it was good enough to stand on its own. We ate this for dinner, but I could totally see this served at a party or potluck.
Don't be intimidated by the effin' long directions below; it was super easy to put together.
I set out to make a sandwich that was inspired by Cuban flavors and, let me just say, this was the best effin' sandwich I've had in awhile. Behold the Cubana Libre, so named for the fact that "libre" means "free", and these are cruelty-free. The avocado lends a creaminess that goes excellently with the kick of the lime and onion and the sweet tenderness of the plantain. The black beans are a Cuban staple that add a meaty heft to the whole darn thing. It's also soy-free if you use soy-free Earth Balance.
Make this sandwich. It's like a panini on crack. I plan on keeping the ingredients for this on hand for when I need a sandwich I can really sink my teeth into.
