1/2 cup non-gmo light corn syrup
2 Tbs vegan butter, softened
1 1/2 Tbs vanilla
3 Tbs creamy peanut butter
1 tsp salt
5 1/2 cups powdered sugar
For the caramel:this caramel sauce
1 cup roasted salted peanuts
For the "milk" chocolate:
1/2 bag vegan white chocolate chips
1/2 bag vegan semi-sweet chips
For the nougat, combine all the ingredients except for the powdered sugar in a mixer until smooth. Slowly add in the powdered sugar 1 cup at a time until a firm spongy dough is created. Drape a piece of plastic over it and set aside.
In a microwave safe bowl or over a double boiler, melt the chocolate and white chocolate chips. Stir until smooth.
Lay out a piece of wax paper. 11x17 or so. Spoon 1/3 of the chocolate onto the wax paper and spread out to leave a thin layer on the bottom. Allow to cool for at least an hour.
Prepare the caramel as stated on the recipe above. Allow to cool 20 minutes, then mix in the peanuts.
Using your hands, take small chunks of the nougat ball and drop them all over the firmed up "milk" chocolate. Push the chunks down all over the surface to create a smooth layer of nougat. It'll be about 1/2" thick.
Pour the caramel mixture over the top of the nougat.
Slide the wax paper with the candy bar onto the back of a baking pan or a cutting board, then place it in the fridge for at least an hour.
When you're ready to complete, cut the rough edges off the sides to create a rectangle. Cut the bars into desired sizes. Space on wax paper leaving at least an inch between the bars.
Re-melt the chocolate mixture. Drop spoonfuls of chocolate on top, then smooth down over the sides to cover the sides of the nougat and caramel, down to the chocolate. Continue will all the Chortle bars you've cut.
Allow to cool for at least an hour in the fridge, then enjoy.
To store, put in an airtight container and leave in the fridge.
Note: There aren't any crazy waxes in the chocolate, so these aren't really appropriate to leave out of the fridge for an extended period of time. The chocolate will become soft. Not melty, just soft.
