That's saying a lot.
I like to make this soup as easy as possible, so I buy a lot of frozen vegetables for it. You can, of course, make it with fresh, but you'll want to adjust the cook times. But for me, frozen veggies work nicely and is an easy way to add color to a meal.
This soup is colorful, chock full of protein and vitamins. I crave this soup whenever I get a cold. If you freeze this soup in muffin tins then throw the frozen muffin-sized soups into a freezer bag, you'll have individual portions for when you or someone you love gets sick.
Optional: a pat of Earth Balance butter

At this point, I put it into bowls and let each person salt and pepper it to their liking. Another thing we like to do is add a pat of Earth Balance to it, to add a creamy note and a salty note. I'd suggest salting after you add this.
