And what was even better was that most of this is prepared in the crock pot! Could this be any effin' easier?
- 2 cans of jackfruit, drained
- 1 can of root beer
- 1 medium yellow onion
- 1 Tbs canola oil
- 1 6 oz can tomato paste
- 1/2 cup ketchup
- 1 tsp mustard powder
- 1 tsp onion powder
Add the jackfruit, root beer and onion to your crock pot and cook on medium heat for at least 3 hours.
Using tongs or a spatula, shred the fibers of the jackfruit to replicate the look of pulled pork.
In a skillet on medium heat, heat up the canola oil. Using your tongs, remove the jackfruit from the liquid in the crock pot and add it to the skillet. Fry up the jackfruit until dried out and crisped up a bit. In the crock pot, while the jackfruit is in the skillet, add the tomato paste. Stir until heated, then add the ketchup, mustard powder and onion powder. Replace the jackfruit into the crock pot and cook on low for at least another 30 minutes.
Serve on buns, or for a totally gluten-free meal, make pulled "pork" tacos or put it on a salad. You're only limited by your imagination at this point. Enjoy!
