This Salisbury Tofu was the perfect main course for this last Sunday. Since I pressed the tofu hours in advance, the rest of this prep was pretty easy.
- 2- 12 oz packages extra-firm tofu, pressed like crazy
- 2 tsp vegan worcestershire
- 1 tsp ground pepper
- 2 tbs oil to pan fry tofu
- 1 batch Awesome Vegan Brown Gravy
Preheat oven to 375.
After your tofu is pressed, Slice it along the height of the brick into 4 equal rectangles that will be about 1/4" x 4" x 5" or so. Rub worcestershire and pepper onto both sides of the tofu and allow to sit for about 20 minutes.
Preheat a saute pan to medium and heat oil until hot.
Place the tofu one or two slices at a time in the pan and cook until browned on both sides. Layer into a baking dish and cover with the brown gravy. Bake for about 30 minutes.
Serve with a side and some yummy bread rolls, and eat the leftovers the next day on some sandwich bread, as my little Bella did for her school lunch!
