I had a bunch of leftover homemade vegan challah bread, so I used that, but you can pretty much use any bread you have around, especially this french bread. I plan on making this with a sourdough next because I love the contrast of sour with sweet.
- 1 loaf french bread, challah, etc. (about 8 cups cubed bread)
- 2 cups almond milk
- 2 tbs ground flax seed
- 2 tsp ground cinnamon
- 1 tbs vanilla extract
- 3 ripe bananas
- syrup to taste
Preheat oven to 400.
Cube the bread and put into a large bowl.
In a medium bowl, whisk together the almond milk, ground flax, cinnamon and vanilla.
Thinly slice the bananas and add to the mixture.
Pour over the cubed bread and toss to coat every cube of bread with the liquid.
Spray a baking dish with nonstick spray then evenly layer the bread cube mixture into the baking dish.
Bake for 40 minutes, or until brown and crisp on top.
Serve with syrup, vegan butter, or even some coconut cream.
This also keeps and reheats just fine. Enjoy!
