2 cups flour
1 tsp salt
1 tsp baking soda
Put the vinegar into the bottom of a 1 cup measuring cup, then fill the rest of the cup with the almond milk. Allow to sit for about 20 minutes. This is your buttermilk.
Preheat the oven to 375.
In a stand mixer or mixing bowl with hand mixer, stir together the flour, salt and baking soda. Slowly add in the buttermilk and mix on medium-high until it turns into a sticky ball. Continue mixing for another minute.
In a loaf pan sprayed with a light mist of cooking spray, press the sticky dough mixture into the bottom of the pan. Score a big "x" into the top of the dough about 1/2" deep. Bake for 30-32 minutes or until a toothpick comes out clean and the crust is very brown. Slice and serve as desired.
Shown is a piping hot slice with a generous pat of Earth Balance. Mmmmm. I plan on eating a slice tomorrow morning with strawberry preserves slathered over it.
