
Ener-G Egg Replacer is my go-to egg replacement for all my baking. Whenever I say "2 egg replacements" in my recipes, I personally am using this product. It's easy, versatile and bakes perfectly in any cake, pancake or cookie I've ever made. In fact, I've found in some of my old recipes that my cookies and cakes turn out just a little moister than my pre-vegan days. I've heard that some other egg replacements will have issues in certain applications, such as chocolate, but I've never had any issue with using this product. It's perfection in a super affordable, shelf-stable box. I mean, how often do you see a dozen eggs for less than a dollar a carton? Because that's the average cost on a box, which is the equivalent of about 100 eggs. Also, and I think this is the best part yet: according to their website, this product is free of gluten, wheat, dairy, yeast, egg, soy, nut and low/no sodium. How effin' great is that?
