Ener-G Egg Replacer is my go-to egg replacement for all my baking. Whenever I say "2 egg replacements" in my recipes, I personally am using this product. It's easy, versatile and bakes perfectly in any cake, pancake or cookie I've ever made. In fact, I've found in some of my old recipes that my cookies and cakes turn out just a little moister than my pre-vegan days. I've heard that some other egg replacements will have issues in certain applications, such as chocolate, but I've never had any issue with using this product. It's perfection in a super affordable, shelf-stable box. I mean, how often do you see a dozen eggs for less than a dollar a carton? Because that's the average cost on a box, which is the equivalent of about 100 eggs. Also, and I think this is the best part yet: according to their website, this product is free of gluten, wheat, dairy, yeast, egg, soy, nut and low/no sodium. How effin' great is that?

I am a bit suspicious about them, to be honest. They taste like real, honest to goodness cheese. When I crave cheese, I buy these, then I do my best to not eat the whole bag in one sitting. I made the mistake of letting Bella sit with the bag, which was about half-full, and she DID eat the whole bag.
These are made with navy beans and non-GMO corn (amazing, right?!) and they're GLUTEN FREE. Say what?! So yum. I found these at Whole Foods. But get them and put them up high, or eat them away from other people, because really, you will not want to share these.
