I made these and found I added ingredients in a little pattern, which I think is a great formula to follow should you decide to mix these up with different ingredients than I used. The formula is under the recipe.
P.S. These pictures are taken by my pool, because, wow, we've been having some great weather lately, and I'm a little obsessed with the pool right now.
- 1/3 cup vegan butter or coconut oil
- 1/3 cup agave nectar
- 1/3 cup brown sugar
- pinch of salt
- 2 cups rolled oats
- 1/3 cup of each of the following:
- sliced almonds
- raw sunflower seeds
- flaked coconut
- chocolate chips
Preheat oven to 350. Line a 9"x 13" or other large baking pan with foil. In a microwave safe dish, add the vegan butter, agave nectar, brown sugar, and salt. Heat for several minutes until the mixture is boiling. Whisk to incorporate and smooth out the mixture.
In a large bowl, mix the rest of the ingredients together. Pour the butter/sugar mixture over the dry mix and stir around to coat thoroughly. It will be sticky awesomeness. Dump the sticky awesomeness into your baking dish. Using a piece of wax paper as a barrier between your skin and the granola mixture, press the mixture down firmly to compact. Press down around the edges to to make this as flat as possible. The tighter and harder your press it down, the better. Remove wax paper and place in the oven. Immediately bump the temperature of the oven down to 250 degrees. Bake for 10 - 12 minutes. Remove and allow to cool. Place in the fridge and allow to chill for at least 20 minutes before attempting to slice. Slice into 16-20 portions.
Formula: I think if you do 1 part sugar/ oil mixture as above to 2 parts oats, and 5 different 1/3 cup portion add ins, you have a really solid recipe for a chewy granola bar. I suggest having 1 or 2 of those portions be a softer food item, such as dried fruit, for added chewiness.
