This is the my most favorite way to eat cabbage. Oddly enough, I usually only make this around St. Patrick's Day. I really need to stop doing that. It's delicious and reheats nicely as well. Try it, you're sure to love it.
1/2 red onion, chopped
1 large or 2 small cabbages, cut into 1.5-2 inch cubes
1/2 tbs pickling spice
1 cup Irish-style beer (I used Killian's Irish Red)
1 tsp salt
In a large pot with a lid, or a wok (I prefer the wok), on medium heat, melt the butter. Add the onion and cabbage and toss in the butter and cook for about 5 minutes, stirring occasionally. In a spice grinder, grind the pickling spice. Add the ground spices, the salt, and the beer to the cabbage and cover. Continue cooking for about 20- 25 minutes, stirring occasionally, until the cabbage is soft. Uncover for another 2 minutes until the rest of the liquid has cooked off. Enjoy with another pat of butter if you're decadent like me.
