Vegan Barbecue Chick'n Wontons

I considered calling these Wanton Wontons, because these are an unprovoked attack to your tastebuds, but I thought better of it. Instead, I called them what they're filled with, which is also known as awesomeness.
These were so simple and so tasty, Bella was eating them as I was folding them, un-fried. These are one of those foods that would make your omnivore friends swear up and down that they're not vegan, so make them up for anyone and watch them get INHALED.

Picture
8 oz. chick'n-less strips (this time I used Trader Joe's brand)
1/4 red onion
3 Tbs. vegetable oil
seasoned salt to taste
1/2 cup barbecue sauce
1 package vegan wonton wrappers
enough vegetable oil to shallow pan-fry to finish

In a food processor, coarsely chop the chick'n and the red onion.
Heat a medium saute pan on medium heat. Add the olive oil. When hot, add the chick'n and onions and cook until the onions are wilted and the chick'n is brown. Add seasoned salt to taste, then add the 1/2 cup barbecue sauce. Cook down until the barbecue sauce is thick and coats the chick'n and onion mixture. Spread onto a plate and allow to cool.
Place 1 tsp. chick'n mixture in the center of the wonton wrapper. Dip your finger in water then trace around the outside of the wonton. Fold over and press firmly to seal the edges completely. Do this until you run out of chick'n mixture.
Heat frying oil in a frying pan or a deep fryer until about 325 degrees. Add in wontons to fry, without crowding the pan. Cook for about a minute. Place on paper towels to drain. Eat!

Hi, I'm Apryl, a sassy artist-type who also happens to be the mommy in this 3-piece (soon to be 4-piece) band. My husband, Sean, and I are both foodies with food & beverage backgrounds.
I love experimenting in the kitchen and using my husband and 6 year old daughter, Anabella, as the testers. I also love feedback, and I hope you enjoy the recipes I post as much as we enjoyed them.
