You complete me. There really is no match for your wonderfulness. You've made it possible for me to feed even the most carnivorous of omnivores without a fuss, and you've enabled me to recreate childhood favorites like a charm. These Vegan Chicken Salad Sandwiches were delectable, delightful perfection.

- 1 package Beyond Meat Grilled Style, or 12 oz. Morningstar Farms Chicken Strips, thawed.
- 2 stalks celery, minced
- 2 green onions, minced
- 1/2-2/3 cup vegan mayo (I use Vegenaise)
- 1/4 cup seasoned bread crumbs
- salt and pepper to taste
In a food processor, process the Beyond Meat until it's small and flaky, kinda like canned tuna fish. Mince finely if you don't have a food processor.
Mix together the Beyond Meat, celery, onions, mayo, bread crumbs and salt and pepper.
Refrigerate for at least 1 hour to allow the flavors to meld.
Serve on sourdough bread or however else you like to eat vegan chicken salad (my fave is on celery sticks).
