Today's lunch is rice topped with spicy vegan tuna (Meatless Select tuna, Just Mayo, and a little sriracha), kelp granules, and toasted sesame seeds with a little soy filled pig squeezy. Also snap peas and black grapes, and a fig bar and a granola bar for afternoon snack.
Today's Friday lunch was a throwback to my childhood lunches. Today was a bologna and cheese, made with Yves
Vologna, A Tofutti cheese slice, green leaf lettuce, and mustard. The "chips" are some quinoa thingies I found at Sprouts, which I pre-portioned then tossed the bag - oops! And of course, apple slices to finish off this gourmet meal.
Today's lunch was a chef salad. There's romaine, olives, shredded carrot, chick'n tenders, chopped vegham, Daiya shreds, and a side of her favorite dressing: Caesar. She loved it! Also served with black grapes and animal crackers.
Recently, Bella has been obsessed with the wonder that is vegan Caesar dressing. So today, she has breaded chick'n strips wrapped in butter lettuce, carrots with Caesar (also enough to dip the lettuce wraps in) and pears. There's also Fig Bars on the side.
Today I decided to go with a sweet burrito for her lunch. It's a tortilla smeared with chocolate peanut butter, topped with a banana, then sprinkled with raisins and shredded coconut (see pic below). She's also going to be nomming on carrots and grapes, with Earth Balance Cheesy Squares as a snack.
Baby carrots, sliced pears, black seedless grapes, strawberry Whole Soy yogurt, and what I'm calling Riso Del Diablo, which is a spicy rice dish with the pepperoni crumbles from the same company that makes soyrizo, rice, bell peppers, onion, garlic, veggie stock, and Italian seasoning.
Today's lunch was a Gardein Fish sandwich with homemade tartar sauce, a leftover hush puppy, green beans with lemon pepper, apple slices, and a maple cookie. Honestly, this was thrown together because I woke up late, hahaha. Fortunately we had leftovers from the previous night's dinner and she enjoyed it.
Happy Friday, y'all! Today I went for a fun and vegan little spin on the craptastic Lunchables. This is the Sprouts brand butter crackers (vegan and very few ingredients), some Yves Canadian bacon, and Tofutti vegan slices. I found these amazing pears at the Farmer's market Saturday, so I sliced them up (she was eating them as I was slicing them) and then for a treat, Teeny Bits, which are a Kosher chocolate covered wafer cookie that's vegan but has no other redeeming qualities, because Friday.
They say Lunchables are for the mom who has given up, but I say this version, while easy, isn't giving up at all! Giving in, maybe, but that never hurt anyone in moderation.
Today for lunch, Bella is having some leftover chick'n orzo (one of her faves) with peas, nut clusters, apple slices and carrot slices.
